This guide to all things flour-adjacent, by the King Arthur Baking Company, embraces the notion that baking is an act of love. In this updated version of the classic text, the bakers at King Arthur aim to help everyone become "a top-notch baker" by respecting tradition and embracing new concepts, such as gluten-free baking. The book is divided into breakfasts; quick breads; buckles, cobblers, and crisps; crackers and flatbreads; yeast breads; sourdough; cookies and bars; cakes; pies and tarts; and pastry. There are chapters on ingredients and tools, and comprehensive notes on measurements and high-altitude baking. Nutritional information is provided for each recipe, along with tips and illustrations. With more than 450 recipes, there's a treat for every occasion, such as Baking Powder Biscuits, Basic Fruit Cobbler, and Flourless Peanut Butter Chocolate Chip Cookies. As in the original edition, there are black-and-white illustrations throughout. VERDICT The first edition of the Baker's Companion is a classic for a reason, and home bakers can't go wrong with this updated introduction to all things baked, from one of the country's most-loved flour companies.--Gricel Dominguez, Florida International Univ. Lib., Miami
